Outback Steakhouse Bread

Outback Steakhouse Bread is a distinctive loaf made with warm water, vegetable oil, honey, molasses, whole wheat flour, cocoa powder, salt, active dry yeast, and bread flour. The dough is mixed and rested, then divided and shaped into loaves for a moist, soft bread with subtle chocolate notes.

Description

This recipe combines sweeteners like honey and molasses with whole wheat flour and cocoa powder to create a flavorful dough. The mixture starts with warm water, oil, honey, and molasses, blended with whole wheat flour, cocoa, and salt, then allowed to rest so the flour can fully hydrate. Yeast and bread flour are gradually added as the dough develops a smooth, elastic texture.

The dough is portioned into four loaves and placed on cornmeal-dusted baking sheets, covered, and left to rise until doubled. This method results in a bread with a tender crumb that balances the richness of molasses and cocoa without overpowering sweetness.

The cocoa powder adds depth and color while complementing the whole wheat's nutty flavor. This bread pairs well with hearty mains or can be enjoyed simply with butter.

Ingredients

Servings
  • 2 1/2 cups water 110 degrees F or 43 degrees C, warm
  • 1/4 cup vegetable oil
  • 1/2 cup honey
  • 2 tablespoons molasses
  • 3 1/2 cups whole wheat flour
  • 3 tablespoons cocoa powder
  • 1 teaspoon salt
  • 2 tablespoons active dry yeast
  • 2 1/2-3 cups bread flour
  • cornmeal for dusting

Instructions

  1. In the bowl of a stand mixer fitted with a dough hook, mix together the warm water, vegetable oil, honey, and molasses until well combined.
  2. Add the whole-wheat flour, cocoa powder, and salt to the bowl. Mix on slow speed until just combined. Cover the bowl with a clean kitchen towel and let it rest for 10 minutes to allow the flour to absorb the liquids.
  3. Set your stand mixer to slow speed and gradually add the active dry yeast and 1 cup of bread flour at a time. Mix until the dough no longer clings to the side of the bowl and forms a smooth and elastic ball.
  4. Prepare 2 baking sheets by lining them with parchment paper and dusting them with cornmeal.
  5. Transfer the dough to a clean and lightly floured surface. Divide the dough into four equal portions and shape each portion into a separate loaf.
  6. Place the shaped loaves onto the prepared baking sheets. Cover the loaves with a clean kitchen towel and allow them to rise for 45-60 minutes or until doubled in size.
  7. Preheat your oven to 350°F (175°C).
  8. Dust the tops of the risen dough with some additional cornmeal for added texture.
  9. Bake the loaves in the preheated oven for approximately 40 minutes or until the internal temperature reaches 190°F (88°C).
  10. Once baked, remove the bread from the oven and transfer them to a cooling rack. Allow the bread to cool completely before slicing and serving.
  11. Slice the Outback Steakhouse Bread and serve it with butter. Enjoy this homemade bread with its rich flavor and hearty texture!
