Oven Baked Balsamic Chicken
Description
The recipe calls for flattening 6-ounce chicken breasts to even thickness for uniform cooking, then coating them with a balsamic-based marinade combining vinegar, honey, olive oil, Dijon mustard, basil, garlic, salt, and pepper. The chicken and cherry tomatoes are arranged together in a baking dish to roast at 425°F until the chicken reaches an internal temperature of 165°F, ensuring safety and juiciness.
The chicken is tender from baking in the flavorful marinade that caramelizes slightly, with honey adding subtle sweetness and balsamic vinegar providing acidity. The roasted cherry tomatoes complement with a juicy, roasted element, while the parsley garnish gives a fresh, herbal note.
This dish suits a straightforward main course and pairs well with various sides like vegetables, grains, or salads. Its hands-off baking method simplifies meal preparation while offering robust flavor.
Leftovers should be stored in an airtight container in the refrigerator and consumed within 2 to 3 days to maintain freshness and safety.
Ingredients
- 4 6 ounce chicken breast boneless, skinless
- ¼ cup balsamic vinegar
- 2 tablespoons honey
- 2 tablespoons olive oil
- 2 teaspoons Dijon mustard
- 1 teaspoon basil dried
- 1 teaspoon salt
- ½ teaspoon black pepper
- 4 garlic minced, cloves
- 2 pints cherry tomato halved
- parsley for serving, chopped
Instructions

- Add the tomatoes around the chicken in the baking dish.
- Bake in preheated oven for 20-25 minutes, or until meat thermometer inserted into thickest part of the chicken breast reads 165°F.
- Garnish with chopped parsley, and serve with your favorite sides.
Notes
- Store leftovers refrigerated in an airtight container and use within 2 to 3 days for best quality and safety.
