Oven Baked Balsamic Chicken Thighs

Oven Baked Balsamic Chicken Thighs combine browned, honey-garlic glazed chicken thighs with butter-coated baby bella mushrooms, all finished with a homemade reduced balsamic glaze offering a sweet and tangy depth. The chicken is tender and caramelized, and the mushrooms absorb buttery garlic flavors, creating a balanced and savory meal.

Description

This recipe starts by tossing chicken thighs in olive oil, garlic, salt, and pepper before browning them in a skillet coated with butter and honey to develop a caramelized exterior. The chicken and halved baby bella mushrooms, coated in melted butter with garlic, salt, and pepper, are then transferred to a baking dish and roasted until cooked through.

Meanwhile, a balsamic glaze is prepared by simmering balsamic vinegar with brown sugar and honey until reduced by half and thick enough to coat a spoon, providing a rich, syrupy condiment for the chicken. This glaze adds a tangy sweetness that complements the savory chicken and earthy mushrooms.

Serve the thighs and mushrooms with the balsamic glaze drizzled over or served on the side. This dish works well accompanied by simple sides such as roasted potatoes or steamed vegetables.

Using good-quality balsamic vinegar improves flavor significantly. If skipping the initial browning step, you can bake the chicken directly and finish under the broiler to crisp the skin, watching closely to prevent burning.

Ingredients

Servings
  • 1 ½ pounds chicken thighs
  • 1 tablespoon olive oil
  • 3 teaspoons garlic divided, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper cracked
  • 4 tablespoons butter divided
  • 2 tablespoons honey
  • 8 ounces baby bella mushroom cut in half

Balsamic Glaze

  • 2 cups balsamic vinegar
  • cup brown sugar
  • 2 tablespoons honey
  • salt pinch

Instructions

  1. Preheat oven to 375 degrees and grease a rimmed sheet pan or large baking dish
  2. Toss chicken thighs with olive oil, 2 teaspoons garlic, salt, and pepper.
  3. Melt butter in a large skillet over medium-high heat. Add 2 tablespoons honey and give it a quick stir to coat the pan. Add chicken thighs and cook 1-2 minutes on each side to brown the outside. (See note for alternate method)
  4. Transfer chicken to your prepared baking pan/dish.
  5. Toss mushrooms with remaining 2 tablespoons butter (melted), 1 teaspoon garlic, and some salt and pepper. Add to the sheet pan along with the chicken.
  6. Bake for about 15 minutes until chicken is cooked through and mushrooms are tender. While chicken cooks, prepare the balsamic glaze.
  7. In a medium sauce pan combine balsamic vinegar and brown sugar. Give it a good stir, bring to a boil over medium-high heat, then reduce heat to a simmer 8-10 minutes until reduced by half and thickened enough to coat the back of a spoon. Stir in remaining 2 tablespoons honey and pinch of salt.
  8. Drizzle balsamic glaze over chicken and mushrooms, garnish with fresh basil if desired and serve.

Notes

  • Choose quality balsamic vinegar for better taste and glaze consistency.
  • To skip stove-top browning, bake chicken fully then broil for a few minutes to crisp the skin, watching carefully to avoid burning.
