Description
This recipe features chicken drumsticks marinated in a blend of soy sauce, oyster sauce, sugar, curry powder, sesame oil, garlic, and onion. The marinade is prepared by finely chopping the onion and garlic, combining them with the other ingredients, then rubbing the mixture thoroughly onto pierced drumsticks. Marinating at least 5-6 hours or overnight allows the flavors to penetrate the meat deeply.
Baking at 220°C (430°F) for about 40 minutes total, flipping halfway through, ensures both sides become golden brown and crisp outside while retaining juiciness inside. Ingredients
- 1 kg chicken drumstick
Marinade
- 1/2 onion about 70g, large
- 1 clove garlic
- 3 tbsp soy sauce
- 3 tbsp oyster sauce
- 4 tbsp sugar
- 1/2 tbsp curry powder
- 1 tbsp sesame oil
Instructions
- Finely chop the onion and garlic and mix together with all other marinade ingredients in a large bowl.
- Pierce the chicken drumsticks in several places with a fork then add to the marinade mix and rub the marinade in.
- Cover with saran wrap and leave in the fridge for 5-6 hours or overnight.
- Bake the chicken drumsticks on 220 c (430 f) for about 20 minutes.
- Flip each chicken drumstick over and bake for a further 20 minutes so both sides are golden brown and crispy.
Notes
- The marinade mixture works well for other meats like pork and beef, offering similar flavor profiles.
- Piercing the chicken drumsticks before marinating allows better marinade absorption.
