Oven Baked Chicken Thighs Recipe

This Oven Baked Chicken Thighs recipe uses boneless, skinless chicken thighs seasoned with herbs and honey, browned briefly before baking in a creamy garlic Dijon sauce. The result is tender, flavorful meat coated in a rich, slightly tangy sauce that complements the subtle herb seasoning. The recipe suits home cooks seeking a comforting, saucy chicken dish that works well with sides like vegetables or rice.

Description

Oven Baked Chicken Thighs combines bone-free chicken thighs tossed in olive oil, salt, cracked black pepper, and a herb blend, browned in butter and honey to develop caramelized notes. The pan sauce then comes together with garlic, chicken broth, Dijon mustard, heavy cream, salt, and pepper, boiled briefly to meld flavors. After returning the chicken to the skillet and coating it with sauce, it finishes cooking in the oven, ensuring even heat and thorough cooking.

The cooking method yields juicy thighs with a slightly crisp sear from the initial browning. The sauce adds creaminess balanced by mustard’s sharpness and garlic’s aroma, enhancing the dish’s overall flavor profile. This recipe fits well as a main course accompanied by simple sides like steamed vegetables or mashed potatoes.

If an oven-safe skillet is unavailable, the chicken can be transferred to a baking dish after browning, and the sauce poured over before baking. The recipe also notes that chicken breasts can substitute thighs, requiring adjustments to cooking time. This flexibility allows tailoring the dish to ingredient availability or preference, while internal temperature of 165°F ensures doneness.

Ingredients

Servings
  • 6 chicken thigh boneless, skinless
  • 2 teaspoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper cracked
  • ½ teaspoon herbes de provence or Italian seasoning blend
  • 1 tablespoon honey
  • 1 tablespoon butter

For the Sauce

  • 2 tablespoons butter
  • 3 teaspoons garlic minced
  • 1 cup chicken broth
  • 2 tablespoons Dijon mustard
  • 1 cup heavy cream
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper cracked

Instructions

Prepare the Chicken

  1. Preheat oven to 375 degrees.
  2. Toss chicken with olive oil, then season chicken with salt, pepper, and Herbs de Provence (or Italian seasoning).
  3. Melt 1 tablespoon butter in a large skillet over medium heat. Stir in honey.
  4. Add chicken thighs to the skillet and brown for 2-3 minutes on each side. Transfer to a plate and set aside.

Prepare The Sauce

  1. Add butter to the pan. Once melted, stir in garlic for 1 minute til fragrant.
  2. Whisk chicken broth, dijon mustard, heavy cream, and salt and pepper to the pan, and bring to a boil.

Bake the Chicken

  1. Return chicken to the pan, spoon sauce over the chicken, then transfer skillet to preheated oven. (See note for alternate method without an oven-safe skillet)
  2. Bake for 15-18 minutes until chicken is cooked through.

Notes

  • Use an oven-safe skillet to brown chicken and finish cooking in the same pan; otherwise, transfer to a baking dish after browning.
  • Chicken breasts can substitute thighs but require pounding to even thickness and possibly longer baking until fully cooked.
  • Bake until internal temperature reaches 165°F for safe doneness, adjusting time based on chicken thickness.
