Oven Baked Crispy Breaded Pork Chops
Description
This recipe uses a three-step breading process: dredging pork chops in seasoned flour, dipping in beaten egg, and coating with a mix of breadcrumbs, grated Parmesan cheese, garlic powder, salt, and pepper. After briefly browning each chop in olive oil on the stovetop to develop a crust and lock in juices, they are baked at a high temperature on a parchment-lined sheet to finish cooking evenly.
The result is pork chops with a crisp exterior that contrasts with a moist and tender interior. The Parmesan and garlic powder in the crust introduce savory notes, while seasoning flour with salt ensures balanced flavor beneath the breading. Resting the chops after removing from the oven allows carryover heat to complete cooking without drying out the meat.
Using a meat thermometer is recommended to check doneness, aiming for an internal temperature of 145°F. A slight pink center is acceptable for juicy pork. This dish pairs well with vegetables, mashed potatoes, or a light salad.
Ingredients
- 4 pork chops 1-inch thick, boneless
- 1 egg whisked
- ¼ cup all-purpose flour
- ½ cup seasoned bread crumbs
- 2 tablespoons Parmesan Cheese grated
- 1 teaspoon garlic powder
- salt to taste
- black pepper to taste
- 1 tablespoon olive oil or as needed
Instructions
- Preheat oven to 425°F and line a rimmed baking sheet with parchment paper.
- In a shallow bowl combine bread crumbs, Parmesan cheese, garlic powder, and salt and black pepper.
- Season flour on a shallow plate with salt to taste. In another shallow bowl add the whisked egg.
- Dab the pork chops dry with a paper towel and lightly dredge in flour. Dip the pork chop into the egg, making sure to coat all sides. Dip the pork chop into the bread crumb mixture.
- Heat olive oil In a frying pan over medium-high heat. Brown pork chops for 1 minute per side.
- Add to the prepared baking sheet and bake for about 12-14 minutes or until they reach an internal temperature of 145°F. Do not overbake.
- Rest 5 minutes before serving.
Notes
- If substituting breadcrumbs with plain or Panko, season them with Italian seasoning, salt, and pepper to maintain flavor.
- Different pork chop cuts and thicknesses require adjusting cooking times; thinner chops cook faster.
- Use a meat thermometer to avoid overcooking; remove chops from oven a few degrees before 145°F as temperature rises while resting.
- A slight pink interior is normal and helps retain juiciness in pork chops cooked to 145°F.
