Oven Baked Fingerling Potatoes

Oven Baked Fingerling Potatoes are halved potatoes seasoned with olive oil, garlic, thyme, salt, and pepper, then baked until golden brown with a finishing touch of Parmesan cheese. The result is crispy outside edges and tender centers with a savory herb and cheese flavor. They can be prepared in the oven or air fryer for convenience.

Description

This recipe features fingerling potatoes cut lengthwise and coated with olive oil, minced garlic, salt, black pepper, and thyme. Roasting them in a hot oven first allows the cut sides to brown and crisp. After an initial bake, shredded Parmesan cheese is sprinkled on top, and the potatoes finish cooking to develop a golden crust enriched by the cheese.

The garlic and thyme infuse the potatoes with herbaceous notes while the Parmesan adds a sharp, savory finish. This cooking method creates potatoes that are crisp on the outside with a soft, creamy interior.

The potatoes can be served as a side dish to meats or vegetables, adding a flavorful alternative to mashed or roasted potatoes. For a quicker approach, they can also be cooked in an air fryer by following a similar seasoning and baking process.

Using fresh minced garlic rather than powdered enhances the aroma. Check doneness by piercing with a fork; potatoes should be easily pierced but not mushy.
