Oven-Baked Garlic Parmesan Wings
Description
This recipe uses chicken wings coated in melted butter and a mixture of finely grated parmesan cheese with spices including garlic powder, paprika, dried oregano, cayenne pepper, and black pepper. Baking on a foil-lined baking sheet fitted with a rack allows air to circulate and helps the skin crisp. The wings bake first at 400°F for 30 minutes to cook thoroughly, then remain in the oven at 170°F for an additional hour to dry and crisp the skin without drying out the meat. The parmesan mixture provides saltiness and a savory crust that complements the mild heat from the cayenne and aromatic spices.
The wings can be eaten as is or served with a favorite dipping sauce. The parmesan and seasonings deliver sufficient salt, so no additional seasoning is necessary before cooking. They can be enjoyed warm and stored in the refrigerator for 3-4 days, reheated gently in the microwave at reduced power or in the oven. Using party wings (flats and drumettes) or whole wings works well; baking with the wing tips intact yields extra crispy tips that are edible and add texture.
Ingredients
- Avocado oil spray
- 1 cup parmesan grated
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon oregano dried
- ¼ teaspoon cayenne pepper
- ¼ cup butter
- 24 chicken wings flats and drumettes; about 2 pounds
Instructions
- Preheat the oven to 400°F. Line a rimmed baking sheet with foil and fit it with a rack. Spray the rack with oil.
- In a shallow bowl, mix the parmesan with the black pepper, garlic powder, paprika, oregano, and cayenne. In a shallow microwave-safe bowl, melt the butter.
- Dip each wing into the melted butter, then dredge it in the parmesan mixture.
- Place the coated chicken wings on the rack. Lightly spray them with oil.
- Bake the wings for 30 minutes. Then, while they are still in the oven, lower the oven temperature to "keep warm" (170°F) and keep the wings in the oven for one more hour to crisp up the skin.
- Serve, if desired, with a dipping sauce.
Notes
- Use finely grated parmesan cheese for even coating and flavor distribution.
- Whole wings can be baked with tips intact, which become crispy and edible.
- Seasoning with salt before baking is unnecessary because parmesan provides enough saltiness.
- Store leftovers up to 3-4 days refrigerated and reheat gently in the microwave or oven.
- For sauced wings, bake similarly and dip in a butter-parmesan-garlic-parsley sauce before serving.
