Oven Baked Meatballs Recipe

These oven-baked meatballs combine ground beef with panko breadcrumbs, eggs, and a blend of seasonings including garlic and onion powder for a balanced, savory flavor. The meatballs are shaped in a larger size, offering a hearty texture that holds together well after baking. They can be served topped with marinara sauce or a beef broth-based gravy, making them versatile for pairing with sides like mashed potatoes or pasta.

Description

The Oven Baked Meatballs Recipe uses 2 pounds of ground beef mixed with panko breadcrumbs, eggs, and seasonings such as salt, cracked black pepper, garlic powder, onion powder, and optional red pepper flakes. The mixture is shaped into large, tightly formed meatballs using a 1/4 cup portion scoop, then baked at 400°F for 25 minutes. The size of the meatballs offers a filling portion size, suitable for a substantial meal.

The meatballs can be served with marinara sauce or an easy beef broth brown gravy that can be enriched with sour cream for a creamy texture. This preparation method helps the meatballs retain moisture and flavor without frying, making cleanup simpler.

For serving, the meatballs pair well with mashed potatoes or pasta, providing a comforting combination. Leftovers freeze well either before or after baking, making meal prep convenient. The recipe is flexible to scale down by halving the ingredients for a smaller batch, maintaining the same proportions.

The accompanying gravy is straightforward to prepare and can be enhanced by stirring in sour cream before boiling to avoid curdling. This adds richness to the dish without complicating the cooking process.

Ingredients

Servings
  • 2 pounds ground beef
  • 1 cup panko breadcrumbs
  • 2 egg large
  • 2 teaspoons salt
  • ½ teaspoon black pepper cracked
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon red pepper flakes optional, crushed
  • 1 marinara sauce OR 1 batch of gravy, optional, 25 oz jar

Instructions

  1. Preheat oven to 400 degrees and grease a large baking sheet or a casserole dish.
  2. In a large bowl combine ground beef, panko, eggs, salt, pepper, garlic powder, onion powder, red pepper flakes (if using). Stir with a large spoon or spatula, then use clean hands to mix the ground beef until all ingredients are well incorporated.
  3. Use a 1/4 cup cookie scoop (or a 1/4 cup measuring cup) to portion out the beef mixture. Roll each into a tight ball and place on prepared baking pan 2 inches apart.
  4. Transfer to preheated oven and bake for 25 minutes.
  5. Serve over mashed potatoes or pasta with your favorite marinara sauce or my easy beef broth brown gravy (see note).

Notes

  • The meatballs are larger than typical and 3 to 4 per serving provide a substantial meal when paired with sides like potatoes or pasta.
  • You can freeze half of the batch either before or after baking for convenient later meals.
  • This recipe can be halved easily to make a smaller quantity using 1 pound of ground beef.
  • The brown gravy served with these meatballs includes sour cream added before boiling for a smoother texture without curdling.
