Description

The pork belly strips are seasoned generously with a mixture of salt, black pepper, garlic powder, onion powder, and optionally a pinch of habanero powder for heat. Liquid smoke may be brushed on prior to seasoning for a smoky aroma. The slices are baked on a parchment-lined sheet at 400°F, flipped about halfway through baking, and re-seasoned to build layers of flavor and crisp perimeters.

Seasoning: (makes more than you will need)

  • ½ teaspoon salt sea salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • pinch habanero powder optional, if you like it with a little heat
  • liquid smoke optional

Main:

  • ½ lb pork belly thinly sliced

Instructions

  1. Preheat oven to 400°F/204°C.
  2. Line a large baking sheet (13" by 18") with parchment paper.
  3. Mix the seasoning together in a small bowl.
  4. Arrange the pork belly slices onto the tray.
  5. Sprinkle the seasoning on top of each pork belly slice.
  6. Bake the pork belly slices in the oven at 400°F/204°C for 10 minutes.
  7. Remove from oven, flip the pork belly slices and sprinkle with seasonings again.
  8. Return the pork belly to the oven and bake for another 10-15 minutes, or to your desired crispness.
  9. Remove from oven and transfer to a container or plate lined with paper towel.
  10. Leave to cool. As the bacon cools, it will crisp up further.
  11. Use in sandwiches, crumbled up in salads, or enjoy as a snack.

Notes

  • If using liquid smoke, lightly brush pork belly slices with it before applying the seasoning mix.
