Oven Baked Protein Donuts (Gluten-free)
Description
Oven Baked Protein Donuts use a combination of 1:1 gluten-free baking flour, baking powder, collagen powder, cinnamon, salt, and dairy-free milk to create the base. Melted butter, honey, eggs, and apple cider vinegar are incorporated for moisture and leavening support. The batter tends to be sticky, requiring smoothing in silicone molds before baking.
The donuts bake relatively quickly at 350°F and are cooled in the mold to maintain shape and tenderness. After baking, they are brushed individually with melted butter and dipped in a cane sugar and cinnamon mixture, which forms a sweet, crisp topping that contrasts with the soft crumb inside.
These donuts are best enjoyed at room temperature to retain their light texture. Silicone molds prevent sticking and tearing better than traditional greased pans, which can make removal difficult. The cinnamon sugar coating level can be adjusted to taste to avoid overly dark toppings.
Ingredients
- 1 ⅓ cup 1:1 gluten-free baking flour
- 2 teaspoon baking powder
- ½ teaspoon cinnamon
- ½ teaspoon salt
- ⅓ cup collagen powder
- ½ cup dairy-free milk
- 1 tbs dairy-free milk
- 1 teaspoon apple cider vinegar
- 2 egg
- 1.5 tablespoons butter
- ¼ cup honey
- ⅛ cup honey
- Coating
- 3 tbs dairy-free butter
- 4 tbs cane sugar
- 1 teaspoon cinnamon
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- In a large bowl, combine all the dry ingredients.
- Melt the butter and add in the wet ingredients one by one.
- Mix well.
- Portion into a silicone donut mold. Then, transfer to a cooling rack.
- Bake for 20 minutes in the oven and let cool in the mold.
- Mix together the cane sugar and cinnamon sprinkle.
- Gently brush melted butter on a donut before dipping it lightly into the cinnamon sugar mixture.
- Repeat the process for all the donuts.
Notes
- The batter is sticky, so help portion and smooth it in the silicone molds for even tops.
- Silicone donut molds work best as they allow easy removal without tearing; traditional pans can cause sticking even when greased.
- Brush the donuts with butter before dipping to help the cinnamon sugar coating adhere.
- Enjoy the donuts at room temperature for the best texture; refrigerated storage can make them dense.
- Adjust cinnamon amount in the topping to prevent overly dark crust if appearance is a concern.
