Oven-Baked Sesame Fries
Description
This recipe features potato wedges tossed with oil and sesame seeds, then baked until crisp and golden brown at 425°F. Including potato starch in the coating helps achieve extra crispiness. Nutritional yeast can be added for a cheesy flavor without dairy. The key is uniform wedge size for even baking and enough spacing on the sheet to allow hot air circulation, which helps the fries become nicely crisped on all sides.
The texture is a combination of crispy edges with soft, fluffy potato centers. The sesame seeds contribute a subtle nuttiness and crunchy texture to every bite. Flavors are balanced with salt and pepper, and can be adjusted with additional spices like paprika or garlic powder to suit personal tastes.
These fries work well as a snack or alongside sandwiches, burgers, or grilled foods. They can be served with condiments of choice such as ketchup, aioli, or soy-based dips. The recipe lends itself to variation through added herbs or spices.
To maintain crispiness, it is important not to overcrowd the baking sheet and to let fries rest briefly after baking before serving. Adjust baking time depending on wedge thickness and test doneness with a toothpick. Striking a balance with oil ensures fries are crispy but not greasy.
Ingredients
- 1 pound russet potato unpeeled, cut into wedges, or Yukon gold potatoes
- 1 Tablespoon oil avocado, grape seed, sunflower, etc, medium-high heat
- 2 Tablespoons sesame seeds
- 1 Tablespoon potato starch optional, but makes fries extra crispy
- 1 Tablespoon nutritional yeast optional
- salt to taste, generous pinch
- black pepper to taste
Instructions
- Preheat oven to 425 degrees F. Lightly oil metal baking sheet, or cover with parchment paper. Toss potatoes in all ingredients until coated, if seeds don't stick, drizzle with a bit more oil.
- Spread potatoes on the baking sheet in an even layer (the more room between the wedges the better) and bake for 20 to 25 minutes, flipping once halfway through, until potatoes are golden brown and crispy. Serve immediately with condiments of choice.
Notes
- Cut potato wedges to uniform size to ensure even baking.
- If sesame seeds do not adhere well, add a little more oil but not so much that potatoes become soggy.
- Arrange wedges evenly spaced on the pan to allow air circulation and promote crispness; bake in batches if necessary.
- Check doneness by piercing the thickest part with a toothpick; it should pass through easily.
- Let fries rest a few minutes on the pan before transferring to a serving plate.
- Enhance flavor by adding herbs or spices like paprika, chili powder, garlic powder, or parsley.
