Description
Oven Fried Chicken uses boneless, skinless breasts soaked in buttermilk to keep the meat moist and tender. After marinating, the pieces are coated in a mix of flour, seasoning salt, paprika, and black pepper for flavor and texture. The chicken is arranged in a butter-lined baking pan preheated in the oven to help achieve a crispy exterior as the butter melts and cooks the bottom of the chicken. Baking at 400 degrees for about 15 minutes finishes the cooking while keeping the coating from becoming greasy or heavy. The result is a dish with a flavorful crust and juicy chicken inside.
This recipe makes a straightforward dinner dish that pairs well with side vegetables or salads. The absence of frying makes it less messy and more manageable in a conventional kitchen. The option to cut the breasts into strips provides flexibility for serving as main or finger food.
Ingredients
- 4 chicken breast boneless, skinless
- 2 cups buttermilk
- 1/2 cup butter
- 1 cup flour
- 1-2 tablespoons seasoning salt or to taste, Morton's Season All
- 1 tablespoon paprika
- 1 teaspoon black pepper
Instructions
- Cut each chicken breast in half. If you prefer chicken strips, you can also cut them into strips.
- Place chicken pieces in a large resealable bag and cover with buttermilk. Seal bag tightly, squeezing out all the air. Marinate chicken for at least 1 hour or up to overnight.
- Preheat oven to 400 degrees. Spray the bottom of a 9x13 pan or 11x17 pan with cooking spray then cut up the butter into pieces and place around the bottom of the pan. This keeps the chicken from sticking to the pan. Place the pan in the oven for about 8-10 minutes until the butter is melted and HOT.
- While butter is melting in the oven, combine seasoning salt, pepper, flour, and paprika in a shallow dish or pie plate. Set aside.
- Remove the pan from oven and spread melted butter around the bottom of the pan.
- Shake excess buttermilk off of chicken and completely coat each piece with the seasoning mix. Place each coated piece of chicken in the pan.
- Bake for 15 minutes. Remove pan from oven and carefully turn each piece of chicken over.
- Continue baking for 15-20 more minutes, or until cooked through.
- Serve warm right out of the oven.
