  • 1 pound ground beef
  • 1 taco seasoning 1 oz package or 2 tablespoons homemade
  • 1 tortilla chips bag
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cheddar cheese shredded
  • 1 Mexican blend cheese shredded
  • 1 can 15 oz refried beans
  • toppings
  • 1 can 11 oz Fiesta Corn
  • tomato cut into small pieces
  • 2-3 tablespoons red onions finely diced
  • 1-2 jalapeños seeded and diced or sliced
  • sour cream
  • cilantro snipped
  • 1-2 green onions sliced
  • 1 avocado sliced or diced
  • 1 can 15 oz black olives, sliced
  • 1 salsa in jar
  • lime wedges
  • guacamole

Instructions

  1. Cook ground beef in skillet on stovetop until no pink remains
  2. Sprinkle with taco seasoning and continue cooking for 1-2 minutes. Add 1-2 tablespoons of water if necessary
  3. Drain and set aside
  4. Preheat oven to 375 degrees F and spray a baking cookie sheet with non-stick cooking spray
  5. Add tortilla chips to prepared baking sheet
  6. Spoon refried beans over chips
  7. Add half of the ground beef mixture over refried beans
  8. Add half of the cheddar and Mexican blend cheeses
  9. Spoon remaining ground beef mixture over cheese
  10. Top with black beans
  11. Sprinkle remaining cheeses over beans
  12. Bake in oven for 10-15 minutes or until cheese is melted and bubbly
  13. Serve warm with your favorite toppings
