Oven Roasted Asparagus Recipe

Oven Roasted Asparagus offers tender stalks with a slight crispness, seasoned simply with olive oil, garlic, Parmesan cheese, lemon juice, salt, and pepper. Roasting at a high temperature concentrates the asparagus flavor while adding a lightly golden exterior. This preparation highlights the vegetable’s natural taste and texture, making it an easy side dish.

Description

This recipe uses fresh asparagus trimmed at the base to remove tough ends. The stalks are arranged in one layer on a baking sheet and coated with olive oil, kosher salt, and freshly ground black pepper. Roasting at 425°F for 8 to 10 minutes cooks the asparagus just until tender, preserving some snap without becoming limp.

Once out of the oven, the asparagus is tossed with minced garlic, freshly grated Parmesan cheese, and a squeeze of lemon juice. This finishing touch provides a bright, savory, and slightly tangy flavor contrast that complements the roasted vegetable’s earthiness.

Oven Roasted Asparagus works well as a side for a variety of main courses including poultry, fish, and meat. It can be served warm immediately after tossing with the garnishes, preserving the delicate texture and vibrant flavors.

Ingredients

Servings
  • 1 asparagus bunch
  • 3-4 Tablespoons olive oil
  • salt to taste, kosher salt|freshly ground
  • black pepper to taste, kosher salt|freshly ground
  • 2 garlic minced, cloves
  • 3 Tablespoons Parmesan Cheese freshly grated
  • lemon juice of 1/2 lemon

Instructions

  1. Heat oven to 425°F.
  2. Wash the asparagus and trim the bottom inch of so of each stalk to get rid of the tough, fibrous part. A good way of telling where you should cut is to bend one stalk of asparagus toward the bottom until it snaps off. Then lay it next to the rest of the asparagus and cut them all to be the same length.
  3. Pat the asparagus dry and spread it out in a single layer on a baking sheet. Drizzle with the olive oil and sprinkle generously with kosher salt and freshly ground black pepper. Give the asparagus a toss to coat it evenly in the olive oil and seasoning, then roast it in the oven for 8 to 10 minutes, depending on thickness, just until tender.
  4. Remove from the oven and sprinkle with the garlic, Parmesan cheese, and lemon juice and give it another toss before serving.
