Oven Roasted Cauliflower Recipe
Description
This recipe starts with chopping a cauliflower head into thin, flat-sided florets to maximize browning and surface area. The florets are tossed in olive oil, then coated evenly with a mixture of salt, cracked black pepper, and garlic powder. Grated Parmesan cheese, preferably the dry pre-grated type that crisps nicely, is added and stirred to cover each floret. The florets are spread in a single layer on a lightly greased or parchment-lined baking sheet to ensure even roasting.
Roasting at 425°F for about 15 minutes causes the cauliflower to become tender enough to pierce easily with a fork while developing golden brown edges where the Parmesan forms a crispy crust. This method produces a pleasing contrast between the soft cauliflower interior and the savory, crunchy exterior enhanced by the garlic and cheese seasoning.
The dish is best served hot immediately after roasting to enjoy the crisp texture. It works well as a side vegetable to many main courses, adding a lightly cheesy, savory note without heavy sauces or fats.
Tips recommend dividing florets in half lengthwise for broad flat sides that maximize contact with the pan and encourage browning. Using pre-grated Parmesan helps to achieve the crisp crust effect. Parchment paper lining the baking sheet can simplify cleanup and improve crispy edges.
Ingredients
- 1 cauliflower chopped into thin florets, see note, head
- 1 tablespoon olive oil
- ⅓ cup Parmesan Cheese see note, grated
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper cracked
Instructions
- Preheat oven to 425 degrees.
- Stir together salt, pepper, and garlic powder.
- In a large bowl, toss cauliflower and olive oil.
- Sprinkle salt, pepper, and garlic powder over cauliflower and toss well.
- Add parmesan cheese and toss well to coat the cauliflower.
- Transfer to a lightly greased baking sheet (see note).
- Bake in preheated oven for 15 minutes or until cauliflower is easily pierced with a fork and is golden brown on the edges. Serve immediately - enjoy!
Notes
- Cut cauliflower florets in half lengthwise for broad flat sides that expose more surface area to heat.
- Pre-grated Parmesan cheese creates a crispier, golden crust compared to freshly grated cheese.
- For even crispier results, line the baking sheet with parchment paper before roasting.
