Oven Roasted Green Beans

This Oven Roasted Green Beans recipe results in crisp-tender beans coated with olive oil and garlic, then roasted to develop toasted edges and browned spots. The roasting brings out earthy flavors and caramelizes the garlic, creating a savory side dish with a slight crispness on the outside.

Description

Oven Roasted Green Beans are prepared by trimming and drying fresh green beans, then tossing them with olive oil and finely minced garlic. Spread out in a single layer on a baking sheet, the beans are seasoned with kosher salt and black pepper before roasting at 425 degrees until lightly toasted and browned. This high-heat roasting concentrates the beans' flavor and adds a slight crispness while maintaining a tender interior.

The garlic infuses into the beans during roasting, providing savory aromatics without overpowering the natural green bean taste. The seasoning with salt and pepper enhances overall flavor balance. Roasting rather than boiling or steaming ensures a firmer texture and appealing browned notes.

This side pairs well with a variety of main dishes and can be served warm from the oven. Adjust the roasting time depending on bean thickness for optimal texture; thinner beans brown faster than thicker varieties. For best results, avoid overcrowding the pan so beans roast evenly.

Ingredients

Servings
  • 2 pounds Green bean if using frozen, see notes above, fresh
  • 3 tablespoons olive oil
  • 4 cloves garlic finely minced
  • kosher salt to taste
  • black pepper to taste

Instructions

  1. Preheat oven to 425 degrees. Trim green beans if necessary. Pat green beans completely dry with paper towels.
  2. Place green beans in a large bowl and toss with olive oil and garlic until evenly coated.
  3. Place green beans on a baking sheet and spread out so the green beans aren't touching each other if possible. You can divide them between two baking sheets if needed. Sprinkle beans with salt and pepper and place in the oven.
  4. Roast for 15-20 minutes or until beans start to look toasted and brown spots start to form.

Notes

  • Roasting times vary with bean thickness; thinner beans need less time, thicker ones require a few extra minutes.
