Oven Roasted Pork Tenderloin
Description
Oven Roasted Pork Tenderloin uses a 1-pound pork tenderloin seasoned with kosher salt and pepper, then topped with a glaze made from Dijon mustard, honey, and fresh herbs like thyme or rosemary. The preparation involves placing the pork on a bed of thinly sliced sweet onions in a greased baking dish to infuse additional flavor and moisture during roasting.
Covered baking at 400°F cooks the pork gently, then finishing under the broiler crisps the top and caramelizes the sweet and savory glaze. The internal temperature is carefully monitored to reach 140-150°F for optimal doneness and juiciness. Resting the pork for 10 minutes before slicing helps redistribute juices for a moist texture.
This method yields a tender center with a flavorful golden crust, complemented by softened onions on the side. Fresh herbs can be added before serving for visual appeal and enhanced aroma.
Key tips include allowing the pork to come to room temperature before cooking to ensure even heat penetration and using an instant-read thermometer to confirm doneness. The combination of salt and honey enhances both seasoning and caramelization.
Ingredients
- 1 (1 lb.) pork tenderloin
- 2 tablespoons Dijon mustard stone ground
- 2 tablespoons honey
- 1 teaspoon thyme fresh, minced or rosemary leaves
- 1 onion thinly sliced, sweet
- kosher salt to taste
- ground black pepper to taste
Instructions
- Preheat oven to 400°F. Grease a baking dish or roasting pan.
- In a small bowl, stir together mustard, honey, and thyme or rosemary.
- Place sliced onion in a single layer in the bottom of the prepared dish. Pat the pork dry. Season with salt and pepper on all sides, and then place on top of the sliced onions in the dish. Brush about half of the mustard mixture over the pork.
- Cover with foil and bake for 25 minutes.
- Turn the oven setting to "BROIL" on high.
- Remove the cover, brush the pork with additional mustard sauce, and place about 4-6 inches under the broiler for about 5 minutes, or until a crispy crust forms on top and the pork reaches an internal temperature of 140-150°F.
- Remove the dish from the oven and allow the pork to rest for about 10 minutes before slicing and serving. Garnish with additional fresh herbs, if desired.
Notes
- Let pork sit at room temperature for about 30 minutes before cooking to ensure even roasting.
- Use an instant-read thermometer to check for internal temperature of 140-150°F for perfect doneness.
- Allow the pork to rest 5-10 minutes after cooking to redistribute juices for moist slices.
- The honey and salt in the glaze promote flavor and caramelization on the pork exterior.
