  • 3 lbs. potato or red or a mixture of both, cut into bite-size pieces, Yukon gold variety
  • 2 to 3 Tablespoons extra-virgin olive oil
  • 4 Tablespoons butter (melted)
  • 1 teaspoon garlic powder (or 4 garlic cloves, minced)
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 Tablespoons parsley fresh

Instructions

  1. Preheat oven to 425 degrees.
  2. Cut potatoes into bite-size pieces and place in a bowl. Toss with olive oil. In a small bowl, stir together melted butter, garlic powder, salt, and pepper. Drizzle over potatoes and toss evenly.
  3. Line a baking sheet with a Silpat, parchment paper, or aluminum foil spray with non-stick cooking spray. Pour potato mixture onto the pan.
  4. Bake for 30-40 minutes, depending on the size of the potatoes. Flip the potatoes halfway through cooking time. Watch carefully and pierce with a fork to know if the potatoes are completely cooked through.
