Oven Roasted Potatoes

Oven Roasted Potatoes features halved or quartered red potatoes tossed in olive oil, garlic powder, and fresh herbs like parsley, thyme, and rosemary. Roasting at 375°F produces tender interiors with a crisp golden exterior, accented by aromatic herb flavors. The seasoning balances well with the natural earthiness of the potatoes. This preparation is great as a side dish to complement a variety of main courses, offering a satisfying texture and herbal note.

Description

Oven Roasted Potatoes uses red potatoes, cut to size and soaked briefly in water to improve texture. After drying, they are coated in olive oil, garlic powder, fresh parsley, thyme, and rosemary, plus salt and black pepper. Roasting in a preheated oven at 375°F for 40-50 minutes yields potatoes that are fork tender with a golden, slightly crispy exterior. The mix of fresh herbs adds a bright, aromatic flavor that contrasts nicely with the soft potato flesh.

The dish can be served immediately as a versatile side to meats or vegetables. The herb combination gives it a fresh flavor that enhances many meal types. Red potatoes’ waxy texture helps maintain shape and a good balance of softness and crispiness after roasting.

Leftovers keep well in the refrigerator for 3-4 days but may lose their crispness and soften. Serving them warm and fresh preserves the texture best. The recipe notes suggest using other waxy potatoes, like new potatoes or fingerlings, as alternatives, while Yukon Gold is workable though less waxy.

Ingredients

Servings
  • 1½ - 2 lb red potato halved or quartered, small
  • 2 Tbsp olive oil
  • 1 tsp garlic powder
  • 1 Tbsp parsley chopped finely, fresh
  • 2 tsp thyme chopped finely, fresh
  • 2 tsp rosemary chopped finely, fresh
  • ½ tsp kosher salt
  • ½ tsp black pepper ground

Instructions

  1. Clean and cut potatoes in half or quartered, depending on size.
  2. Place potatoes in a bowl of water for 30-60 minutes
  3. Preheat oven to 375 degrees F.
  4. Drain potatoes and pat dry with paper towel. Spread evenly on baking sheet, then drizzle with olive oil and toss to coat.
  5. In a small bowl, combine garlic powder, herbs, salt and pepper until well combined. Spoon over potatoes and toss to coat.
  6. Bake for 40-50 minutes or until potatoes are fork tender and golden brown. Serve immediately.

Notes

  • Red potatoes or similar waxy varieties work best to maintain texture during roasting.
  • Soaking cut potatoes in water helps remove excess starch and improves roasting results.
  • Leftovers will keep refrigerated for up to four days but are best served fresh to preserve crispness.
