Oven Roasted Zucchini and Squash
Description
The recipe prepares zucchini and yellow squash by quartering them lengthwise and chopping into pieces of similar size. Tossing the squash with olive oil and seasoning ensures even coating and flavor distribution. Roasting at a moderately high temperature softens the squash while allowing the edges to crisp slightly, resulting in a tender interior with a delicate texture contrast. The use of garlic powder gives a mild garlic flavor without overpowering the delicate squash taste.
The final step of sprinkling fresh minced parsley adds a hint of herbal brightness and visual appeal. This side dish is best served immediately to maintain its texture and freshness. It complements grilled meats, pasta dishes, or other main courses and fits well into meals that emphasize light and fresh vegetables.
