Over Hard Eggs

Over Hard Eggs cooked gently in butter or bacon grease until the whites are fully set with crispy edges and the yolk is firm and slightly puffed provide a tender yet textured breakfast option. Seasoned simply with sea salt and pepper, this method produces eggs with a distinctive texture and full doneness.

Description

The recipe involves cooking eggs in a skillet with butter or bacon grease over low to medium heat. The eggs are cooked slowly until the whites are completely opaque, ensuring they are fully set without burning. After carefully flipping, the eggs cook a bit longer until the yolks are fully cooked through and puffed up, signaling doneness. The slow cooking results in whites with slightly crispy edges and firm yolks.

Serving these eggs hot allows for enjoyment of their texture contrast between the tender yolk interior and crisped edges. They make a classic breakfast or accompaniment to other dishes. Seasoning with sea salt and black pepper is optional based on preference.

Using low heat and taking care not to rush the process helps achieve ideal texture and prevents overcooking or burning. Bacon grease provides an additional flavor note if used instead of butter.

Ingredients

Servings
  • 2 egg
  • 2 tsp butter or bacon grease
  • prinkle salt sea salt
  • prinkle black pepper ground

Instructions

  1. First, add butter to a large skillet over low medium heat. Once butter has melted, add eggs to skillet. Sprinkle with sea salt and pepper if desired.
  2. Cook for 3 minutes on medium low heat or until egg whites have become completely opaque.
  3. Carefully flip over eggs. Cook for another 2 to 3 minutes. The eggs are done once the yolk has puffed up (see photos above for visual reference) and egg whites have crispy edges.
  4. Finally, remove from pan and serve!

Notes

  • Either butter or bacon grease can be used for cooking to add flavor.
  • Cook the eggs slowly over low heat for best texture; avoid rushing the cooking process.
  • The yolk is done when it puffs up, indicating it is fully cooked through.
  • Season with sea salt and black pepper as desired or omit for plain eggs.
