Overnight Chia Pudding - Plus 10 Flavours!

Overnight Chia Pudding combines chia seeds soaked in cashew or almond milk with optional maple syrup for natural sweetness. Left to hydrate overnight, chia seeds swell and create a gel-like pudding with a subtly nutty flavor and a naturally creamy texture. It serves as a make-ahead, customizable breakfast or snack base, adaptable with various toppings for added freshness and crunch.

Description

The Overnight Chia Pudding consists of chia seeds soaked in unsweetened cashew or almond milk, sweetened optionally with maple or date syrup. When refrigerated 6 hours or overnight, the seeds absorb the liquid and thicken into a pudding with a mild nutty flavor. The texture is tapioca-like but can be blended for a smoother, more traditional pudding consistency if preferred.

This pudding can be topped with fresh fruits, nuts, shredded coconut, or granola to add flavor contrasts and texture. It creates a convenient, nutrient-dense meal component that can be prepared in advance, making it suitable for busy mornings or portable snacks.

Adjusting the seed-to-liquid ratio and resting time influences thickness; more seeds or longer refrigeration yields a firmer pudding. The recipe adapts easily to multiple flavour variations, enabling diverse taste profiles from a simple base.

Ingredients

Servings
  • 1 cup cashew milk or almond milk, unsweetened
  • 3.5 tablespoon chia seeds
  • 1 tablespoon maple syrup or date syrup, optional

Instructions

  1. Add all 3 base ingredients to an airtight container or mason jar and mix well or shake vigorously. Refrigerate overnight or 6 hours.
  2. Enjoy topped with fresh fruit, chopped nuts, shredded coconut or granola.

Notes

  • Make larger batches and portion into small jars for several ready breakfasts or snacks.
  • Re-stir or shake pudding 10-15 minutes after refrigerating to prevent clumps and improve texture.
  • If too thin, add extra chia seeds and refrigerate longer to thicken the pudding.
  • Blend the pudding in a high-speed blender for a smoother texture without tapioca-like seeds.
  • Store the pudding refrigerated for 4-5 days.
