Description
Overnight French Toast Casserole combines brioche or similar soft bread with a custard made from eggs, heavy cream, milk, brown sugar, cinnamon, salt, and vanilla. The bread cubes soak overnight in the custard, allowing the flavors to meld and the bread to absorb the liquid fully. A crunchy topping of brown sugar, white sugar, cinnamon, nutmeg, and cold butter is added before baking.

Ingredients
- 1 pound brioche or challah, french bread, or white bread loaf
- 8 large egg
- 1 cup heavy cream
- 2 cups milk
- 1/4 cup light brown sugar
- 2 teaspoons ground cinnamon
- 1/2 teaspoon kosher salt
- 1 Tablespoon vanilla extract
For the Topping:
- 3 Tablespoons light brown sugar , packed
- 3 Tablespoons granulated sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 Tablespoons butter cut into pieces, cold
Instructions
- Grease a 9×13" baking dish. Cut bread into 1 inch chunks and place in pan.
- Assemble: Whisk eggs in a large mixing bowl. Add cream, milk, brown sugar, cinnamon, salt and vanilla and mix well. Pour evenly over the bread cubes and toss gently to combine. Spread into an even layer in the pan. Refrigerate overnight.
- Topping: Add brown sugar, white sugar, cinnamon and nutmeg to a bowl and stir to combine. Add butter and use a pastry blender or your hands to combine until crumbly. Cover and refrigerate until morning.
- Bake: Preheat oven to 350 degrees F (180 degrees C). Uncover french toast pan and sprinkle the topping evenly over top. Bake for 45-50 minutes or until top is golden and casserole is set.
- Allow french toast to cool for at least 10 minutes before serving. Top with homemade syrup , berries, whipped cream, or any other toppings you'd like.
Notes
- Yields about 10 squares, with each square as a serving.
- You can prepare the casserole assembled in the fridge overnight before baking.
- Freeze the assembled casserole wrapped tightly for up to two months; thaw overnight before baking.
