Overnight French Toast Casserole

Overnight French Toast Casserole features tender brioche bread cubes soaked in a rich custard of eggs, cream, milk, brown sugar, and cinnamon, then topped with a spiced buttery crumble. The slow overnight soak absorbs flavors and softens the bread, while baking produces a golden, set casserole with a crisp topping. This dish is a comforting breakfast or brunch option that can be prepared ahead for ease.

Description

Overnight French Toast Casserole combines brioche or similar soft bread with a custard made from eggs, heavy cream, milk, brown sugar, cinnamon, salt, and vanilla. The bread cubes soak overnight in the custard, allowing the flavors to meld and the bread to absorb the liquid fully. A crunchy topping of brown sugar, white sugar, cinnamon, nutmeg, and cold butter is added before baking.

Baking the casserole yields a set, custardy base beneath a golden, crumbly topping that contrasts in texture. The brown sugar and spices add warmth while the vanilla imparts depth. Cooling before serving lets the custard settle for easier portioning.

This casserole serves well sliced from a 9x13 pan and pairs nicely with syrup, fresh berries, or whipped cream. It can be made the day before and refrigerated, convenient for busy mornings. It also freezes well when wrapped tightly, to be thawed and baked later.
