Description

This recipe starts by melting butter and blending it with light brown sugar to create a rich, sweet base. French bread is sliced into half-inch thick pieces, then layered in a baking dish, with half covered in the butter and sugar mixture. A custard made from whisked eggs, vanilla extract, and heavy cream is poured over the bread to soak in. Chopped pecans are sprinkled on top to add crunch and nutty flavor.

The layers are repeated for a double-layered bake. The assembled dish is wrapped and refrigerated overnight, allowing the bread to absorb all flavors and the custard to penetrate the slices fully. Baking the next day will yield a moist and custardy interior with a caramelized nutty topping reminiscent of pecan pie.

  • 1 lb French bread this is the typical weight of a standard loaf of French bread
  • 4 whole egg
  • 1 tsp vanilla extract
  • 4 oz butter salted
  • 6 oz light brown sugar
  • 6 oz pecans chopped
  • 8 oz heavy whipping cream
  • ½ tsp salt

Instructions

  1. Melt the butter in a 9 x 13 inch baking dish (use the microwave.) Pour the melted butter into a bowl with the brown sugar and mix together until well blended.
  2. Using a pastry or silicone brush, distribute the leftover butter around the baking dish, up the sides and over the bottom. 
  3. Slice the French toast into ½ inch thickness. This will yield about 18 slices.
  4. Whisk the eggs together, add vanilla and cream to make a custard.
  5. Step 1 - Spread half of the quantity sugary butter onto half of the quantity of the bread, (about 9 slices) making sure to cover the entire piece of each slice. Put the bread into the baking dish, single layer.
  6. Step 2 - Pour half of the egg custard over the bread slices.
  7. Step 3 - Sprinkle half of the pecans onto bread slices.
  8. Repeat steps 1-3 with the remaining ingredients. Place the second layer of buttered bread slices on top of the first layer of bread slices.
  9. Wrap the baking dish in foil and store overnight in the refrigerator. The following day, take it out of the refrigerator. Do not remove the foil. Put it directly in a preheated 350 degree F oven for 45 minutes.
