Overnight Steel Cut Oats

Overnight Steel Cut Oats combine the hearty texture of steel cut oats with creamy almond milk, soaked overnight to soften without cooking. This method yields a thick, chewy base ready in the morning to be gently reheated and topped with various combinations, such as sliced banana with peanut butter or fresh strawberries with Nutella. The slow soak infuses the oats with flavor while retaining some bite, making it an easy breakfast option prepared mostly in advance.

Description

Overnight Steel Cut Oats use a mixture of water, almond milk, steel cut oats, and kosher salt boiled briefly then cooled and refrigerated overnight. This soaking process hydrates the oats and softens them into a creamy but textured porridge that doesn’t require lengthy morning cooking. The recipe includes four distinct toppings, like peanut butter with banana and cinnamon or caramel sauce with apple and pecans, offering variety to suit different tastes. The oats are gently reheated before serving, allowing the creamy base to warm through without losing the characteristic chewiness of steel cut oats.

The soaking technique is ideal for planning breakfast ahead, reducing morning prep time while maintaining a rich, hearty texture unavailable with quick oats. The almond milk adds subtle creaminess and mild flavor, complementing the saltiness from the kosher salt and the natural nuttiness from the steel cut oats.

Toppings bring extra flavor layers and texture contrasts with nuts, fruits, and sweet spreads, providing options from fruity sweetness to indulgent chocolatey notes. The oats can be easily customized with your favorite combinations or eaten plain.

Leftovers store well in an airtight container in the fridge for up to a week, making this dish convenient for batch preparation. Adjusting the liquid ratio with all milk or all water is acceptable to suit dietary needs or preferences without drastically changing the recipe’s character.
