Description

This recipe begins by bringing a large saucepan of water to a rolling boil. Steel cut oats and salt are stirred in and boiled for one minute, careful to avoid boil-overs. The pot is removed from heat, stirred, then covered and set aside to rest at room temperature for 8 to 12 hours. During this time, the oats absorb water and soften without active cooking.

In the morning, oats are stirred again and gently heated over medium heat for one to two minutes until warmed through. The result is a creamy and tender oatmeal with the chewy texture characteristic of steel cut oats, but ready without a long morning cooking time.

This oatmeal serves as a blank canvas for toppings like bananas, dried cranberries, agave nectar, brown sugar, blueberries, or other fruits to customize sweetness and flavor.

A variation includes substituting half the steel cut oats with rinsed quinoa using the same water and salt amounts and preparation.

Instructions

  1. Bring the water to a boil in a medium or large saucepan (big enough to accommodate about 4 cups of cooked oatmeal with a bit of room to spare).
  2. When it reaches a rolling boil, stir in the oats and salt. Boil for one minute (watching closely so it doesn't boil over).
  3. Remove from the heat and stir. Cover the pot and let it sit overnight, 8-12 hours.
  4. In the morning before serving, stir the oatmeal to recombine the oats with any residual liquid and heat over medium for 1-2 minutes until the oatmeal is heated through.
  5. Serve with your favorite oatmeal toppings! We love bananas, craisins, agave nectar or a bit of brown sugar, blueberries, and lots of other fruits.

Notes

  • Mixing half steel cut oats with rinsed quinoa works well using the same water, salt, and instructions.
  • Use a saucepan large enough to hold the expanded oats with some room to prevent boiling over.
