Overnight Steel Cut Oats Recipe
Description
Overnight Steel Cut Oats begin by boiling water then removing it from heat to steep steel cut oats and salt under a lid for 6 to 8 hours. This soaking softens the texture while retaining the distinct chewiness of steel cut oats. The next morning, the mixture is reheated over medium heat with constant stirring to avoid sticking. Adding almond milk during warming yields a creamier consistency, adjustable to preference with more milk if desired.
This method yields a textured, warm oatmeal with the nutty flavor inherent to steel cut oats, softened from overnight soaking but with a pleasant bite after reheating. It offers a wholesome alternative to instant oats, combining convenience with a fuller flavor.
The oats can be served immediately warm, topped with fresh fruit, nuts, or chia seeds for added flavor and nutrients. Alternatively, dividing into jars for refrigerated storage provides an easy grab-and-go breakfast lasting up to five days. Using water to soak keeps the flavor light, though milk or dairy-free milk can be substituted during soaking. Sweeteners like honey or maple syrup may be added just before serving if desired.
Ingredients
For The Steel Cut Oats
- 2 cups water *
- 1 cup steel cut oats
- 1/4 teaspoon kosher salt
- 1/2 cup almond milk unsweetened
For The Toppings (Optional)
- 1/4 cup Fresh fruit or more
- 1/4 cup nuts
- 1 teaspoon chia seeds
Instructions
- Bring water to a boil in a medium saucepan (with a lid).
- Turn the heat off and add the steel cut oats and salt. Stir to combine. Put the lid on.
- Let it sit on the kitchen counter overnight, at least 6 to 8 hours.
- Next morning, put it back on the stove and heat over medium heat. Stir with a wooden spoon to prevent it from sticking. It will thicken as it cooks.
- For a creamy texture pour in the almond milk, while stirring constantly.
- Cook until its consistency and texture reaches to your liking. Feel free to add in more milk if you like it to be thinner.
- Ladle into bowls, top them off with your favorite toppings, and serve while still warm. Alternatively, you can bring it to room temperature, divide it amongst 4 mason jars, add the toppings and store in the fridge for upt o 5 days for an easy grab and go breakfast.
Notes
- A quick morning reheating ensures a creamy texture, but the oats can also be served immediately after soaking without cooking.
- The recipe yields about 3 to 3.5 cups, suitable for four servings, with nutrition calculated excluding toppings.
- Water is used for soaking for a lighter flavor, but milk or dairy-free milk can replace water if preferred.
- Sweeteners such as honey or maple syrup can be added before serving for additional sweetness.
- Leftovers can be stored in airtight containers or mason jars in the fridge for up to five days for convenient breakfasts.
