Oyster ceviche
Description
This recipe starts by soaking thin slices of red onion in salted cold water paired with lime juice to mellow sharpness. Fresh oysters are removed from shells and chopped into bite-sized cubes while preserving their natural juices. These are combined with the marinated onion, seeded and finely diced tomatoes and green bell pepper, fresh chopped cilantro, freshly squeezed lime juice, a neutral cooking oil such as sunflower oil, and salt to taste.
The ceviche rests chilled in the refrigerator for 5 to 10 minutes, allowing acidity to lightly 'cook' the oysters and blend flavors while retaining a tender, fresh texture. Optional accents such as ketchup or mustard can be added sparingly according to personal preference. Traditional accompaniments include chifles or patacones and hot sauce for added crunch and heat.

Ingredients
- 6 oysters opened - see how to open an oyster if needed, large, fresh
- ¼ red onion thinly sliced or diced
- 1 tomato seeded and finely diced
- ½ green bell pepper finely diced
- ½ tablespoon cilantro finely chopped
- 5 lime juiced
- ½ tablespoon neutral cooking oil sunflower or light olive oil, generic cooking oil
- salt to taste
- ketchup or mustard; optional, dash, based on preference
Serve with:
- chifles or patacones
- hot sauce aji or hot sauce
Instructions
- Soak the onion slices in one cup of cold water with 1 tsp of salt, rinse and drain well. Marinate with the juice of 1 lime.
- Remove the oyster meat from the oysters, saving the oyster juice, and chop the oysters into small cubes.
- In a medium sized bowl combine the chopped oysters, the oyster juices, marinated red onion, diced tomatoes, diced bell peppers, lime juice, finely chopped cilantro, oil and salt to taste.
- Let marinate in the fridge for about 5-10 minutes and serve immediately.
