Oyster Stew Recipe

Oyster Stew Recipe is a creamy soup featuring fresh oysters cooked gently with onions, milk, and half-and-half, seasoned with salt and black pepper. The stew has tender oyster pieces and a smooth broth ideal for serving with oyster crackers.

Description

This Oyster Stew begins by draining the oyster liquor and preserving it. Sweet onions are gently sautéed in butter until soft to develop a mellow base. The reserved oyster liquor is then simmered to reduce, concentrating flavor, before adding milk and half-and-half. Careful heating avoids curdling while building a creamy broth.

Fresh oysters are added near the end and cooked until their edges curl, signaling proper doneness. The stew is seasoned to taste with salt and black pepper. The result is a smooth, rich broth dotted with tender oysters and softened onion pieces.

This stew is typically served warm accompanied by mini saltines or oyster crackers to complement the creamy texture. It's a comforting seafood dish well-suited to chillier days or as a starter.
