Oysters Rockefeller are a traditional dish of New Orleans consisting in oysters topped with butter sauce, spinach, and bread crumbs, that are then toasted.

Ingredients

  • 36 oyster medium size, fresh
  • 6 tablespoons butter
  • 3 oz. spinach finely chopped, fresh
  • 3 scallions finely chopped, with 1 inch of green stem
  • 3 tablespoons parsley finely chopped
  • 5 tablespoons breadcrumbs
  • Tabasco sauce to taste
  • ½ Pernod or other anise liquor, spoonful
  • 1 lb rock salt
  • lemon for garnish

Instructions

  1. Using an oyster knife, open the oyster shells and detach the flesh.
  2. Discard the upper shells.
  3. Rub and dry the lower shells.
  4. Drain the oysters over a salad bowl and reserve their juice.
  5. In a large saucepan, melt the butter.
  6. Add the spinach, scallions, parsley, bread crumbs, Tabasco sauce, and anise liquor.
  7. Cook over low-medium heat, stirring constantly for 15 minutes.
  8. Remove from heat.
  9. Pass the mixture through a sieve.
  10. Let cool.
  11. Preheat the oven grill.
  12. Line a baking dish with a 1 inch (2,5 cm) layer of rock salt.
  13. Moisten the salt with water very lightly.
  14. Place the oysters in the salt.
  15. Pour some reserved juice on each oyster.
  16. Pour an equal amount of the spinach mix prepared on each oyster and spread it to the edge of the shell.
  17. Grill in the oven for about 5 minutes or until the filling is bubbling.
  18. Arrange the oysters in a tray and garnish them with parsley and lemon wedges.
  19. Serve immediately.
