Description
Pale Ale Chili uses a mixture of ground beef and sausage browned and combined with diced bell peppers, jalapeño, poblano peppers, garlic, and yellow onion sautéed in olive oil. The meat and vegetables are simmered together with pale ale beer, diced tomatoes, tomato sauce, and spices including chili powder, cumin, onion powder, and paprika, building layers of spicy and smoky flavor.
The long simmering allows the flavors to meld into a thick, savory chili with a mildly spicy heat balanced by the earthy richness of the meat and the slight bitterness of the pale ale. The texture is chunky with tender meat and soft cooked peppers.
This chili is served warm, garnished with shredded cheddar cheese, sour cream, and green onions. It pairs well with cornbread and is suitable for hearty meals or gatherings. Leftovers can be frozen for later use, making it practical for batch cooking.
Ingredients
- 2 pounds ground beef
- 1 pound ground sausage remove from casing
- 2 bell pepper seeded and diced
- 2 garlic finely minced, cloves
- 1 yellow onion diced
- 1 jalapeño seeded and diced
- 1 poblano pepper seeded and diced
- 3 tablespoons chili powder
- 1 tablespoon cumin powder
- 1 tablespoon onion powder
- 2 teaspoons paprika powder
- 12 ounces pale ale beer
- 14.5 ounces diced tomatoes
- 15 ounces tomato sauce
- 1 tablespoons olive oil
- salt to taste
- black pepper to taste
- cheddar cheese sour cream & green onions, for garnish
Instructions
- Brown the beef and sausage over medium heat in a large pot.
- Drain and set aside.
- Add olive oil, onions, garlic, bell peppers, jalapeno, poblano pepper to the large pot and cook for 5 mins.
- Add drained meat, pale ale, tomatoes, tomato sauce, cumin, chili powder, onion powder, paprika to the pot and cover.
- Bring to a boil, then reduce heat and simmer for an hour minimum; covered.
- Stirring occasionally.
- Top with cheddar cheese, sour cream and green onions or your favorite chili garnish.
- Enjoy with a piece of cornbread!
- Freeze leftovers.
