Paleo Blueberry Pancakes

Paleo Blueberry Pancakes combine coconut flour with eggs, coconut milk, and sweet maple syrup for a grain-free, lightly sweetened breakfast option. Wild blueberries folded into the batter add bursts of tartness and color. Cooking the batter in a greased skillet yields pancakes with a tender, slightly dense texture characteristic of coconut flour, while the berries create moistness and flavor contrast in each bite.

Description

These Paleo Blueberry Pancakes use coconut flour as a base, which imparts a slight coconut aroma and a denser texture compared to traditional wheat pancakes. Eggs and coconut milk provide moisture and structure, while maple syrup adds a gentle sweetness without refined sugar. A dash of baking soda helps leaven the batter, creating some lift during cooking. Wild blueberries folded into the batter add pockets of tangy juiciness and visual appeal.

Cooking pancakes on a greased griddle allows each to cook through evenly, with bubbles forming on the surface signaling readiness to flip. A quick flip and brief cook on the other side yield pancakes that are cooked but still moist and tender. These pancakes suit those following paleo or grain-free diets, offering a flavorful option at the breakfast table.

They pair well with additional maple syrup, nut butter, or fresh fruit toppings, making them versatile for different serving preferences.
