Paleo Gingerbread Mug Cake

Warmly-spiced molasses mug cake made grain-free and dairy-free is a special single-serve treat for fall and winter.

Ingredients

  • 1/2 cup almond flour
  • 1 Tbsp molasses
  • 1 Tbsp pure maple syrup
  • 1/8 tsp baking soda
  • 1/4 tsp pumpkin pie spice or ground cinnamon
  • Pinch salt sea salt
  • 1 Tbsp butter or ghee, melted
  • 1 egg yolk

Instructions

  1. Add all of the ingredients for the mug cake to a microwave-safe mug. Stir well until combined. The mixture will be very thick.
  2. Microwave for 50 to 60 seconds (I do 60), or until the cake has fluffed up substantially.
  3. If desired, serve with a scoop of vanilla ice cream. Enjoy!
