Paleo Granola Recipe

Here's a nutty, crunchy, paleo granola recipe baked in coconut oil and sweetened with dates. Serve this sugar-free recipe as a snack or for breakfast.

Ingredients

  • 1 cup Pepitas pumpkin seeds, raw
  • 1 cup sunflower seeds unsalted, not in shells, raw
  • 1 cup coconut unsweetened, shredded
  • 1 cup almonds unsalted, sliced
  • 2 cups pecans unsalted, chopped
  • 20 dates chopped finely, pitted
  • 1/3 cup coconut oil
  • 2 teaspoons cinnamon
  • 3 teaspoons vanilla
  • salt optional, dash

Instructions

  1. Preheat the oven to 325 degrees.
  2. Mix all of the dry ingredients together in a large bowl.
  3. Melt the coconut oil and pour it in a small bowl. Add the cinnamon, vanilla and salt (if none of the nuts are salted, I recommend a dash of salt). Stir well.
  4. Pour the oil mixture over the dry mixture and stir to combine and evenly coat.
  5. Spread the granola on a baking sheet* and bake for 20 minutes. Stir, then bake an additional 5 minutes.
  6. Allow the granola to cool completely, then store it in an airtight container.
  7. This recipe makes about 7 cups of granola.

  • *If any of the nuts or seeds you buy are salted, you will not want to add additional salt. Add salt to taste if the ingredients are unsalted.
