Paleo Nut Energy Bars

Paleo Nut Energy Bars are a baked combination of chopped pecans, walnuts, almonds, finely chopped dates, egg white, cinnamon, and vanilla. These bars have a dense, chewy texture from the nuts and dates, blended with warm spice and vanilla flavor, making them nutrient-dense snacks for energy and a naturally sweet profile without added sugars.

Description

The preparation involves combining a mix of chopped nuts (pecans, walnuts, almonds) with finely chopped dates for natural sweetness and binding. Egg white serves to hold the mixture together along with cinnamon and vanilla for aromatic flavor. After mixing, the batter is pressed into a parchment-lined 9x13 pan.

Baking at 350 degrees for 16-18 minutes sets the bars, which are then cooled briefly before slicing into rectangles. These bars are portable and nourishing, suitable as a snack or light energy source. The use of egg whites and chopped dates gives a chewy texture contrasting with the crunch of nuts.

The nut types can be varied according to preference or availability, with cashews as an alternative. Egg whites in cartons may be used to avoid leftover yolks from separate eggs.

Ingredients

Servings
  • 2 cups pecans chopped
  • 1 cup walnuts chopped
  • 1 cup almonds chopped
  • 20 dates finely chopped
  • 3/4 cup egg white
  • 2 tablespoons cinnamon
  • 1 1/2 teaspoons vanilla

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a large bowl, mix together all of the ingredients.
  3. To prepare the 9x13 pan, line it with parchment paper or aluminum foil and spray it with cooking spray. Press the nut mixture into the bottom of the pan.
  4. Bake for 16-18 minutes. Allow the bars to cool for 5 minutes, then pull on the wax paper to remove them from the pan. Use a pizza cutter to slice the bars into rectangles of the size you'd like.

Notes

  • Use any mix of nuts you prefer; cashews work well as an alternative or addition to the listed nuts.
  • Egg whites from cartons are a convenient substitute for separated whole eggs and help avoid leftover yolks.
  • Press the mixture firmly in the pan to ensure bars hold together after baking.
