Paleo Protein Fudge

An easy way to boost your protein intake a bit while enjoying some chocolate! This protein fudge keeps well in the freezer for days you just need something sweet.

Ingredients

  • 2 tbs coconut oil
  • 3 tbs cacao butter
  • cup almond butter
  • 1 tbs almond butter
  • ¼ cup collagen powder
  • cup mini chocolate chips
  • 2 tbs honey

Instructions

  1. Combine all the ingredients except for the collagen powder and honey in a small pot (or double broiler!).
  2. Heat over low until the cacao butter is just melted.
  3. Quickly whisk in the honey and collagen powder until no clumps remain.
  4. Portion into mini silicone molds and freeze for one hour.

Notes

  • The recipe makes 16 small fudge bites. One serving is two pieces.
  • You do need both the ⅓c almond butter and the tablespoon.
  • To eat the protein fudge, let it sit at room temperature for 5-10 minutes so that it’s soft.
  • Make sure to heat the ingredients on low and be patient. Otherwise, the peanut butter may burn and it will make the mixture chunky.
  • You can pour the protein fudge recipe into a baking loaf lined with parchment paper or mini silicone molds. The nutrition is calculated based on molds and not a parchment paper-lined pan.
  • Whisk in the collagen with a fork really quickly and while everything is warm. This way it doesn’t have a chance to clump.
  • The protein fudge will stay solid for about 45 minutes at room temperature.
