Paleo Sweet Potato Chili

This Paleo Sweet Potato Chili combines lean ground beef with sweet potatoes, carrots, and a mix of tomato sauce and diced tomatoes, simmered with bay leaves, thyme, chili powder, and red pepper flakes. The slow simmer melds savory, spicy, and sweet flavors while tenderizing the sweet potatoes and carrots, resulting in a hearty and nourishing stew. It can be cooked on the stove or in a crockpot, making it adaptable to different cooking routines.

Description

Paleo Sweet Potato Chili is a robust chili made with lean ground beef cooked alongside diced onions and garlic before adding a combination of tomato sauce, diced tomatoes, beef stock, and hearty chunks of sweet potato and carrot. The inclusion of bay leaves and dried thyme add a subtle herbal note, while chili powder, oregano, salt, black pepper, and red pepper flakes contribute layered warmth and spice. The sweet potatoes lend a natural sweetness and heartiness that balance the savory meat, creating a well-rounded chili.

The chili is simmered either on the stovetop or slow-cooked in a crockpot for several hours to achieve tender, flavorful vegetables and melded-seasoned meat. Removing bay leaves before serving ensures no bitter notes. This chili is suitable for a filling meal during cooler weather and can be garnished with preferred chili toppings.

Variations include substituting yellow onions for red and using garlic powder if minced garlic is unavailable. The recipe yields approximately ten servings, and caloric content may vary depending on ingredient brands used.

Ingredients

Servings
  • 2 pounds ground beef lean
  • 1 medium red onion diced
  • 1 teaspoon garlic minced
  • 1 can tomato sauce 29.5 ounces
  • 2 cups diced tomatoes with juice, petite
  • 3 cups beef stock
  • 1 cup carrot sliced
  • 5 cups sweet potato peeled and cubed into 1" pieces
  • 2 bay leaf
  • 1/2 teaspoon thyme dried leaves
  • 2 teaspoons salt
  • 1 1/2 teaspoons black pepper
  • 1/2 cup chili powder
  • oregano dash
  • red pepper flakes dash

Instructions

  1. In a large dutch oven or large pot, brown the ground beef, onions and garlic. Cook until the ground beef is no longer pink. Drain off any fat.
  2. Add the remaining ingredients to the saucepan. Mix well, bring to a boil over medium heat. Then lower the heat to low and simmer, covered, for about 30-40 minutes or until the sweet potato cubes and carrots are tender.
  3. Remove and discard the bay leaves. Then serve with your favorite chili topping.
  4. Crock Pot Option: Instead of simmering the chili on the stove, you can brown the ground beef, drain off the fat and place it into the slow cooker. Add the other ingredients and let it simmer on low for 6-8 hours on high for 4-5 hours.

Notes

  • Yellow onions can replace red onions without affecting the chili's core flavor.
  • If minced garlic is unavailable, 1 teaspoon of garlic powder is a suitable substitute.
  • The recipe serves about 10 portions; serving sizes affect caloric estimates.
