Ingredients

  • 2 zucchini grated, medium sized
  • 4 egg
  • ? cup almond milk or milk of choice
  • ? cup olive oil or avocado oil
  • 2 ½ cups almond flour
  • ? cup tapioca starch
  • 3 tbsp coconut flour
  • 2 tbsp chia seeds
  • ? cup pistachio divided
  • 2 teaspoons baking powder
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 350ºF. Line a loaf pan with parchment paper and set aside. 
  2. Beat eggs, almond milk, and oil in a large bowl until well combined. Add almond flour, tapioca starch, coconut flour, chia seeds, 2 tbsp chopped pistachios, baking powder, and salt. Mix until combined. Stir in grated zucchini.
  3. Transfer batter to prepared loaf pan and top with the remaining pistachios.
  4. Bake for 1 hour - 1 hour and 10 minutes, check the loaf by inserting a toothpick in the middle until it comes out clean. 
  5. Remove from oven and cool for 10 minutes before removing from pan and transferring to a cooling rack. 
  6. Enjoy!
