Palmiers Recipe

Palmiers are crisp, caramelized puff pastry cookies made by folding sugar-coated dough to create their distinctive palm leaf shape. This recipe uses just puff pastry and sugar, resulting in a flaky, crunchy texture with a sweet, buttery finish. Baking at a high temperature ensures a golden brown color with caramelized edges. Their delicate crunch and subtle sweetness make them an easy treat or a delightful accompaniment to tea or coffee.

Description

The Palmiers Recipe is a straightforward pastry treat requiring only a sheet of puff pastry and sugar. The dough is rolled with sugar, folded inwards multiple times to create layers, then sliced into consistent rounds. Baking at 450°F crisps the edges while caramelizing the sugar, yielding a crunchy, sweet cookie with a golden brown hue.

The cookies have a flaky texture from the puff pastry and a satisfying crunch from the caramelized sugar coating. The folding method creates multiple sugary layers, giving each bite a balanced sweetness and delicate crispiness.

Palmiers can be served as a light dessert or a sweet snack alongside coffee or tea. They are best enjoyed fresh from the oven but maintain good texture if stored in an airtight container.

Since baking time depends on cookie size, it is important to watch for a golden brown color as the doneness cue. Flipping halfway during baking helps ensure even crispness on both sides.
