Pan Con Tomate (Spanish Tomato Bread)

Pan Con Tomate is a traditional Spanish appetizer featuring toasted rustic bread rubbed with garlic and topped with ripe grated tomatoes mixed with olive oil and salt. The bread gets a crisp exterior and a tender crumb, while the fresh tomato topping adds juiciness and bright flavor balanced by rich olive oil and a hint of garlic. This simple preparation highlights the quality and freshness of the ingredients and provides a flavorful accompaniment to many meals or a light snack.

Description

Pan Con Tomate (Spanish Tomato Bread) combines crusty rustic bread toasted until golden and fragrant with garlic, then topped with freshly grated ripe tomatoes seasoned with olive oil and salt. The tomatoes are grated to release their juices and flavor, lending a fresh, slightly pulpy texture that contrasts well with the crunchy toasted bread. The olive oil adds richness, while the garlic imparts subtle pungency. The bread is toasted either in a pan or under a broiler, ensuring a crisp surface that holds the tomato topping well.

This dish serves as a simple yet flavorful snack or appetizer and can complement a variety of meals. It's ideal for using high-quality olive oil and fresh tomatoes to maximize the authentic taste of the recipe. The method emphasizes fresh ingredients and minimal preparation, making the dish straightforward and satisfying without additional complexity.

For convenience or sharing, the toasted bread, garlic, and tomato mixture can be set out separately, allowing guests to assemble their own portions. If tomatoes are limited, halving and rubbing them directly on the bread works as an alternative to grating.

Ingredients

Servings
  • 3 tomato ripe, large
  • 4 tbsp olive oil extra virgin
  • 1/8 tsp kosher salt
  • 1 loaf Rustic bread such as ciabatta
  • 2 cloves garlic peeled

Instructions

  1. Wash and dry the tomatoes. Cut a small part of each tomato and grate them in a bowl using a box grater. Discard the tomato skins.
  2. Add 1 tablespoon olive oil and salt to the tomatoes and stir to combine.
  3. Heat a cast iron skillet over medium high heat. Slice the bread into pieces and brush with the remaining 3 tablespoons of olive oil.
  4. Place the bread slices cut side down in the pan and gently press using a spatula. Toast for about 5 minutes or until they're golden brown. Alternatively, you can toast the bread in the oven using a broiler. To do so, have the bread slices brushed with olive oil in a sheet pan. Place the sheet pan on a rack about 5-6 inches below the broiled and broil for 3 to 5 minutes until they are golden and toasted.
  5. Once the bread is toasted, rub it with the garlic clove and top with the tomato mixture. Serve immediately.

Notes

  • The bread, garlic, and tomato mixture can be served separately so guests can assemble their own servings.
  • If you have fewer tomatoes, rub halved tomatoes on the toasted bread instead of grating.
  • Using high-quality olive oil and ripe tomatoes is key to the best flavor in this simple recipe.
