Pan-Grilled Asparagus with Lemon Shallot Vinaigrette

Ingredients
- 1 tbsp olive oil
- lemon juice and zest of one
- 1 tbsp shallot finely diced **If the shallot is too strongly flavored, dice it and soak it in ice water for 10 minutes
- 1 clove garlic minced
- salt to taste, sea salt and freshly cracked
- black pepper to taste, sea salt and freshly cracked
- 1 asparagus wooden ends trimmed, bunch
- Parmesan Cheese shredded
Instructions
- Combine the olive oil, lemon zest, lemon juice, shallot, garlic, sea salt, and freshly cracked pepper with a whisk until well combined. Set aside to let the flavors mingle. Side Note: If your shallot's flavor is too strong, soak in cold water for a few minutes before making the vinaigrette.
- Heat a grill pan over medium heat and coat it with cooking spray. Place the asparagus on the grill pan and season with sea salt and freshly cracked pepper, to taste.
- Cook the asparagus for 3-4 minutes then flip and cook for another 2-3 minutes or until tender.
- Toss the asparagus with some of the lemon vinaigrette then place onto a serving platter and sprinkle it with Parmesan cheese.
- Serve the asparagus with the remaining sauce on the side. Enjoy.
