  • 4 (6-ounce) salmon fillets
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • lemon juice of one
  • ½ teaspoon salt
  • 1 teaspoon cornstarch
  • 1 tablespoon water
  • 1 tablespoon dill chopped, fresh

Instructions

  1. In a medium sized skillet heat 1 tablespoon olive oil over medium low heat. Season 4 (6-ounce) salmon fillets with salt and pepper and add to the skillet skin sized down.
  2. Cook for about 5 minutes and gently flip the salmon to the other side and cook for another 5 minutes until the salmon is brown and the center is slightly pink. Remove the salmon from the skillet and set aside on a plate.
  3. Add 3 cloves minced garlic to the pan and cook until tender. Add 1 cup heavy cream, ½ cup chicken broth, ½ teaspoon salt, 1 tablespoon chopped fresh dill, and the juice of one lemon.
  4. In a small bowl whisk together 1 teaspoon cornstarch and 1 tablespoon water. Whisk the cornstarch mixture into the sauce and simmer for 3-4 minutes or until sauce has thickened.
  5. Add the salmon back to the skillet on top of the sauce and heat through. Garnish with additional fresh dill if desired and serve!
