Pan Seared Scallops

Pan Seared Scallops are cooked to develop a golden crust on the outside while keeping a tender, slightly translucent center. The recipe includes a citrus mojo vinaigrette made with lemon, orange, garlic, and olive oil to brighten the flavors. Served on a bed of mixed baby greens and arugula with red onion and orange chunks, this dish balances rich seafood with fresh, tangy accents and crisp salad components.

Description

This Pan Seared Scallops recipe involves quickly searing seasoned scallops in butter to create a caramelized crust. Cooking time is controlled to preserve a moist interior. The citrus mojo vinaigrette combines fresh lemon and orange juice with olive oil and crushed garlic, lending a bright, tangy sauce that contrasts the scallop's richness.

The scallops are plated over a bed of mixed baby greens, arugula, and red onion, with additional chopped oranges incorporated for bursts of sweetness and acidity. This combination offers contrasts of textures and flavors, making the dish balanced and fresh.

This preparation is suited for a light main course or elegant starter, emphasizing the scallops’ natural sweetness supported by citrus and slight peppery notes from the arugula.
