Pancake Mix Donuts
Description
This Pancake Mix Donuts recipe uses a simple dough made by combining buttermilk pancake mix with milk, resulting in a slightly shaggy dough that is gentle to roll and cut. The dough is rolled to a quarter-inch thickness and cut into classic donut shapes, fried in oil heated to 375°F until golden on each side, producing a delicately crisp outside with a soft, tender interior. The optional chocolate glaze adds a smooth, sweet coating that enhances the donuts without overpowering their light texture.
Frying requires careful temperature control to avoid overly dark or greasy donuts; watching the color closely ensures they are cooked just right. The donuts are drained on paper towels to remove excess oil before glazing.
The chocolate glaze is made by combining sifted powdered sugar and unsweetened cocoa powder with milk, vanilla extract, and a pinch of salt, stirred until smooth enough to coat the donuts evenly. This glaze can be customized by adjusting the milk quantity for desired thickness.
Ingredients
- 3 cups buttermilk pancake mix brand: Krusteaz
- 1 cup milk
- 3 cups neutral oil peanut or safflower are good options
Chocolate Glaze
- 1 1/2 cups powdered sugar sifted
- 4 tbsp cocoa powder unsweetened
- 4-5 tbsp milk
- 2 tsp vanilla extract
- pinch salt
Instructions
- Place oil into a medium to large heavy sauce pan or dutch oven. Heat over medium heat, checking temperature every few minutes with a thermometer to monitor.
- In a mixing bowl, combine Krusteaz Buttermilk Pancake Mix and milk. Stir to combine but do not over mix. The dough will have a shaggy, not smooth, appearance. Transfer dough to a clean, non-stick surface that has been sprinkled with approximately 1-2 tablespoons of pancake mix or flour.
- Gently roll dough to about 1/4" thick. Use a donut or round shaped cutter, or even a glass, to cut out each donut. Use a smaller cutter to cut out donut holes.
- When oil is at 375 degrees F, gently slip a donut into the oil. Cook for 1-2 minutes per side, or to a light golden brown. Donuts can cook quickly, so once you see a light golden brown it's time to flip or remove the donut. Once cooked, carefully transfer to a baking sheet or plate lined with multiple paper towels. Repeat steps to cook remaining donuts.
Chocolate Glaze (optional)
- In a mixing bowl combine all ingredients and whisk or stir until smooth. If glaze is thicker than you prefer, simply add more milk, 1-2 teaspoons at a time. Gently dip the top of each donut into the glaze, then transfer to a wire rack to allow for excess glaze to drip off. If desired, garnish with sprinkles.
Notes
- Exercise caution when frying donuts to maintain safety and prevent hot oil hazards.
- Use a thermometer to monitor oil temperature for consistent frying results.
- Do not overmix the dough to keep the texture tender and avoid tough donuts.
