Pancake Waffle Mix
Description
The Pancake Waffle Mix consists of all-purpose flour, baking powder, granulated sugar, and salt whisked together to create a convenient base that can be stored up to a year in an airtight container. To prepare pancakes, the dry mix is combined with eggs, milk, melted butter, and vanilla extract, stirred gently until just combined to maintain a light texture. Pancakes are cooked on a hot griddle or skillet until bubbles form and edges set, then flipped to finish cooking, resulting in tender, fluffy pancakes.
For waffles, the batter is prepared similarly but uses slightly less milk to create a thicker consistency suitable for waffle irons. Cooking in a preheated and greased waffle iron produces crisp-edged waffles with a soft interior. This mix’s flexibility provides a practical option for making both breakfast favorites from one base recipe.
By adjusting the milk quantity slightly and cooking method, this basic mix easily supports both pancakes and waffles. It simplifies preparation when serving different preferences without needing separate mixes or recipes. The inclusion of sugar adds a mild sweetness, while baking powder ensures leavening for a light texture.
Ingredients
For the Pancake Waffle Mix:

- 3 Tablespoons baking powder
- 1/2 cup granulated sugar
- 1 Tablespoon salt
For a Batch of Pancakes:
- 2 cups pancake mix
- 2 egg large
- 1 3/4 cups milk whole
- 1/4 cup butter cooled, melted
- 1 teaspoon vanilla extract
For a Batch of Waffles:
- 2 cups pancake mix
- 2 egg large
- 1 1/2 cups milk whole
- 1/4 cup butter cooled, melted

Instructions
For the Pancake Waffle Mix:
- Whisk together all the pancake waffle mix ingredients. Store in an airtight container in a cool dry place for up to 1 year.
For a Batch of Pancakes:
- Place the pancake mix in a large serving bowl.
- Make a whole in the batter and add in the eggs, milk, butter and vanilla extract.
- Stir until the ingredients are just combined. Be careful not to over mix and it’s ok if the batter is a bit lumpy.
- Preheat a griddle or large skillet over medium heat. Once the pan or griddle is hot, add a small amount of oil to the pan.
- Scoop the batter onto the pan in 1/4 cup amounts allowing the batter to spread.
- Cook until bubbles start to appear in the top of the pancakes (1-3 minutes). Flip and cook the opposite sitters of the pancakes until cooked through.
- Serve warm with your favorite toppings and enjoy!
For a Batch of Waffles:
- Preheat a waffle iron and spray it with a non-stick cooking spray.
- Place the waffle mix in a large serving bowl.
- Make a whole in the batter and add in the eggs, milk, butter and vanilla extract.
- Stir until the ingredients are just combined. Be careful not to over mix and it’s ok if the batter is a bit lumpy.
- Pour the batter into the waffle iron and prepare based on your waffle iron instructions.
- Serve warm with your favorite toppings and enjoy!
Notes
- This mix makes about 9 1/2 cups and yields approximately four servings of pancakes or waffles.
- Store the dry mix in an airtight container in a cool, dry place for up to one year for best freshness.
- When mixing batter, do not over-stir; leaving slight lumps helps keep pancakes tender.
