For a Batch of Waffles:

  • 2 cups pancake mix
  • 2 egg large
  • 1 1/2 cups milk whole
  • 1/4 cup butter cooled, melted
  • 1 teaspoon vanilla extract

Instructions

For the Pancake Waffle Mix:

  1. Whisk together all the pancake waffle mix ingredients. Store in an airtight container in a cool dry place for up to 1 year.

For a Batch of Pancakes:

  1. Place the pancake mix in a large serving bowl.
  2. Make a whole in the batter and add in the eggs, milk, butter and vanilla extract.
  3. Stir until the ingredients are just combined. Be careful not to over mix and it’s ok if the batter is a bit lumpy.
  4. Preheat a griddle or large skillet over medium heat. Once the pan or griddle is hot, add a small amount of oil to the pan.
  5. Scoop the batter onto the pan in 1/4 cup amounts allowing the batter to spread.
