Panda Express Mandarin Teriyaki Chicken
Description
The recipe begins by coating chicken thigh pieces with oil and grilling them over high heat to develop grill marks and cook through while retaining juiciness. Meanwhile, a sauce is prepared by boiling soy sauce with brown and white sugar, minced garlic, fresh ginger, lemon juice, and water. This mixture simmers briefly to meld flavors, then cornstarch mixed with water is added to thicken the sauce to a glossy consistency.
The cooked chicken is served over rice and drizzled with the thickened teriyaki sauce to impart a sweet and savory glaze. Complementary sides suggested include grilled pineapple and steamed vegetables, adding fresh brightness and textural contrast to the meal.
This dish offers a balance of tender grilled chicken with a sticky, flavorful sauce that combines citrus, garlic, and ginger notes. It suits a satisfying main course that pairs well with simple, fresh accompaniments.
Ingredients
- 2 tablespoons canola oil or vegetable oil
- 2 pounds chicken thighs boneless/skinless and cut into 2-inch pieces
- 1/4 cup soy sauce low-sodium
- 1/4 cup sugar
- 1/4 cup brown sugar
- 3 cloves garlic minced
- 1/3 cup water
- 1 teaspoon lemon juice
- 1 teaspoon ginger fresh
- 2 tablespoons water
- 2 tablespoons cornstarch
Instructions
- Add the chicken thighs to a bowl and coat with the canola oil.
- Place a grill pan on the stove and heat it up on high. Once heated, add the chicken thighs and leave them for 3-5 minutes on each side. Until they have lines from grilling and the chicken is cooked through. Remove from heat.
- In a separate pan, over medium-high heat, add the soy sauce, both sugars, garlic, lemon juice, water, and ginger. Mix and bring to a boil.
- Reduce the temperature to medium-low and cook the sauce for 2-3 minutes.
- Next, mix cornstarch with water, and add the mixture to the sauce, cook over low heat until the sauce starts thickening.
- Place the cooked chicken on a plate with rice and drizzle the sauce on top.
- Serve with grilled pineapple and steamed vegetables.
