  • 8 pandan leaves fresh or frozen, chopped into 1" pieces
  • ½ C water
  • ½ C granulated sugar

Instructions

  1. Add the pandan leaves to a high-powered blender.
  2. Next, pour in ½ C water to the blender.
  3. Blend the leaves until it reaches a pulp-like consistency.
  4. Strain the green pandan juice into a small saucepan. (Save the pulp for Pandan Cold Brew Coffee, if you like).
  5. Add sugar to the pandan juice and stir over medium heat, until it reaches a simmer and all the sugar has dissolved.
  6. Carefully remove from heat and transfer the syrup to a clean, sterilized jar.
  7. Cool and store in the fridge for up to 1 week.
  8. Note: You may need to give the syrup a stir/shake prior to using.

Notes

  • The recipe yields approximately half a cup of syrup.
  • Store the syrup in a sterilized jar in the refrigerator for up to one week.
  • Shake or stir the syrup before each use to recombine settled ingredients.
  • Keep the pandan pulp to use in other recipes such as Pandan Cold Brew Coffee, if desired.
