Description
This dip begins by soaking or boiling raw cashew nuts until soft, which after blending with hot sauce, chicken broth, salt, garlic powder, dill, and parsley creates a smooth, creamy buffalo sauce base without dairy. Canned chicken breast chunks are then stirred into the sauce for protein and texture. The combined dip is baked at 350°F to meld flavors and then broiled briefly for a lightly browned, bubbly surface.
The outcome is a velvety, spicy dip with herb notes from dill and parsley and the classic buffalo sauce heat. The cashews provide richness resembling cheese, making this a pantry-friendly alternative to dairy-based buffalo dips. It can be served warm with bread, crackers, or vegetables.
Ingredients
- 1 cup cashew nuts raw
- 1/2 cup hot sauce
- 1/2 cup chicken broth
- 1 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp dill dried
- 1/2 tsp parsley dried
- 2 12 oz chicken breast premium chunk, canned in water, 24oz total
Instructions
- Soak raw cashews in water for at least 4 ours or boil raw cashews for 10 minutes to soften
- Preheat the oven to 350F
- Blend cashews, hot sauce, chicken broth, salt, garlic powder, dill, and parsley in a high speed blender
- Blend until a smooth sauce remains
- Drain canned chicken, add to a large mixing bowl, and break up chunks with a fork
- Combine sauce and chicken in the mixing bowl until evenly combined
- Spread dip into a medium sized baking dish
- Place in the oven at 350F for 15 minutes
- After 15 minutes increase the heat to a broil and broil the dip for 5 minutes
- Remove from the oven, cool slightly and then enjoy!
