Papitas or plantain chips, a traditional Haitian recipe, are excellent as a snack or as an appetizer.

Ingredients
- 1 green plantain
- 1 lime
- water
- vegetable oil (for frying)
- salt
Instructions
- Peel the plantain then cut it into thin slices lengthwise.
- Place the plantain slices in a large bowl of water with the lime juice, and salt added.
- Heat a large volume of vegetable oil in a pan to a temperature of 350 F (175°C).
- Deep fry the plantain slices in the hot oil until they are crispy and golden.
- Drain and place on paper towel, then season with salt.
- Serve hot.
